Blueberry overnight oats is a simple breakfast that you can prepare ahead of time! It's a perfect grab and go breakfast that can be customized with so many different toppings and spices.

Over the years I've tried many different healthy breakfasts, but I always come back to my overnight oats recipe. I love it because it's so rich and filling and it can be customized with whatever fruits and spices we have on hand. One of my favorite versions is this Blueberry Overnight Oats. I make a big batch each Sunday for the week and it's a perfect grab and go breakfast for my husband and I.
My husband and I are trying to eat more plant based foods so we use almond milk in this vegan overnight oats recipe, but it can be customized to whatever milk you prefer (that's the beauty of overnight oats!).

- ½ cup old fashioned oats
- ½ cup unsweetened almond milk
- 1 teaspoon cinnamon
- ½ teaspoon coconut palm sugar
- 1 cup blueberries (frozen or fresh)
? INSTRUCTIONS
- In a mason jar or similar container, mix together the oats, almond milk, coconut palm sugar, and cinnamon. Once combined, stir in the blueberries.
- Seal container and refrigerate for at least 12 hours.
?RECIPE TIPS AND VARIATIONS
- The beauty of overnight oats is that they can be customized based on your taste and what you have on hand. A few of my favorite variations are using mixed berries like raspberries and strawberries, apples, and peaches.
- This recipe is great for weekly meal prep. Overnight oats can be stored in the refrigerator for up to 5 days. I don't recommend freezing.
- Blueberry overnight oats can be served either hot or cold (I prefer cold!). If you want to heat them up, I recommend microwaving in 60 second increments (stirring in between) until the oatmeal reaches the desired temperature.
- I like to use mason jars to make these, but you can use any container with a lid.
