Chocolate Chip Meringue Cookies

Meringue cookies are one of my favorite cookie recipes because of how light and fluffy they are. Growing up, my grandmother used to always make lemon meringue pie for me because I absolutely loved the meringue topping! When I found out I could make meringue in a cookie I was hooked!

The secret to making chocolate chip meringue cookies is making sure the mixing bowl is completely clean and that the egg whites are room temperature and absolutely no hints of yolk. Egg whites can be tricky to work with at first because of how delicate they are, but after a little bit of practice it becomes easier.

? Ingredients

  • 4 large egg whites (room temperature)
  • 1/2 tsp cream of tartar
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 3/4 cup chocolate chips

? How to Make

  1. Preheat oven to 300 degrees.
  2. In a large bowl, beat the egg whites and cream of tartar together with a mixer at high speed. Once soft peaks begin to form add in the sugar, a little bit at a time (about a spoonful). Slowly add in the vanilla and beat until stiff peaks form.
  3. Gently fold in the chocolate chips
  4. On a baking sheet form 40 cookies.
  5. Bake for 35-40 minutes or until dry and slightly golden brown.

? Recipe Tips and Variations

  • Make sure the eggs are completely room temperature. I recommend leaving them on the counter 30-45 minutes before cooking. Also you’ll need real eggs for this – boxed egg whites will not work!
  • Make sure the mixing bowl is completely dry before mixing. A little moisture can make it hard to form stiff peaks.
  • To make the chocolate chip meringue cookies uniform, I like to use a piping bag. If you don’t have one of hand you can easily make one using a ziploc bag and cutting off the edge.
  • You can change up the recipe by mixing in different ingredients. Some of my favorite additions are a little peppermint extract, cocoa powder, or a little lemon juice. You could even dip them in a little melted chocolate!

? Storing Cookies

The cookies are stored best in an airtight container on the counter. They will last up to 5 days.

I do not recommend freezing the cookies.
