In my book, there’s nothing better than bananas and chocolate. There’s just something about the combo that’s so delicious and comforting!
We had a bunch of extra ripe bananas this week and instead of making my usual banana bread or chocolate chip banana bars I decided to change it up and make Chunky Monkey Brownies.
They came out AMAZING!! My toddler quickly declared these as her new favorite dessert and now asks for them every weekend.
Ingredients
To make this recipe, you’ll need:
- Butter (softened)
- Eggs
- Brown sugar
- Vanilla extract
- Mashed bananas (about 2 medium bananas)
- Salt
- All purpose flour
- Semi sweet chocolate chips
Cooking tip: the easiest way to mash a banana is to use a masher like you would with potatoes. If you don’t have one on hand, you could also a fork.

How to Make Chunky Monkey Brownies
- Preheat your oven to 350 degrees. Spray a 9×13 baking dish with non stick cooking spray and set aside.
- In a medium bowl, mix together the butter, eggs, brown sugar, vanilla extract, banana and salt with an electric mixer (or stand mixer) until completely mixed.
- Slowly add in the flour until well combined. Once combined, gently fold in about 3/4 of the chocolate chips.
- Pour the brownie mixture evenly into the greased baking dish. Sprinkle the remaining chocolate chips evenly on top.
- Bake for 35-45 minutes or until the edges are golden browned and you can insert a toothpick in the middle and it comes out clean.

How to Store Leftovers
After the brownies cool, store the leftovers in an airtight container for up to 5 days.
To freeze leftovers, wrap the cooled brownies in plastic wrap and then put into a freezer bag and store for up to 6 months. When you’re ready to eat, remove from the freezer and allow the brownies to defrost 24 hours in the fridge before eating.

Recipe Variations
Sometimes I’ll mix this recipe up with a few different variations like:
- Add in 1/2 cup peanut butter chips in addition to the chocolate chips
- Mix in 1/2 cup walnuts
- To make this even more chocolate-ly, swap out the chocolate chips for chocolate chunks or chocolate melts.

My favorite way to soften butter quickly is to put the whole stick of butter in the microwave for about 20 seconds.
What are The Best Bananas to Use?
I find the more ripe (browned) the banana peels are, the better the recipe will be. Ripe bananas have a stronger flavor and are perfect for baking! If you’re in a pinch and only have yellow bananas available you can still use them, just note the banana flavor won’t be as strong.
