Cranberry Crisp Bars
Cranberry crisp bars are an easy and delicious dessert that is the perfect holiday dessert! It’s an easy to make dish that is a great way to use up extra cranberries. Pair it with a little ice cream and you have a cozy dessert!

I have a bad habit of overbuying ingredients, especially during the holidays. This year I was planning to make my Wild Rice and Cranberry Casserole and ended up buying an extra bag of cranberries than I needed.
Instead of making a cranberry sauce with them, I decided to make a little sweet treat during Little A’s nap time and surprise her with it. This cranberry crisp recipe tastes like a delicious cranberry crisp, but in a cute easy to eat bar form. Pair it with a little ice cream and you have the perfect easy to make dessert!
Ingredients
- Cranberries – fresh or frozen will work!
- Old Fashioned Oats
- Flour
- Brown Sugar
- Baking Powder
- Cinnamon
- Butter – swap out dairy butter for vegan to make this a plant based crisp
- Pinch of Sea Salt
How to Make Cranberry Crisp Bars
- Preheat an oven to 350 degrees. Spray a 9×13 baking dish with nonstick cooking spray and set aside.
- In a medium bowl, combine the old fashioned oats, brown sugar, flour, baking powder, and sea salt until well combined.
- Add the butter to the oat mix and mix together with your hands. Continue to mix until the texture becomes crumbly.
- In the baking dish, press the oat mix into the bottom of the baking sheet evenly.
- Top the oat mix with the cranberries
- In a small bowl, create the topping! Combine the brown sugar, flour, cinnamon until well combined. Mix in the butter with your hands until it becomes crumbly.
- Sprinkle the topping on top of the cranberries evenly.
- Bake the cranberry crumble for 45-50 minutes or until golden brown. Allow the cranberry crisp bars to cool for at least 15 minutes before serving or else they’ll fall apart.




Recipe Tips and Variations
- Add in 1/2 cup chopped apples to make this into a delicious cranberry apple crisp
- Swap out the cranberries for blueberries (fresh or frozen) to make easy blueberry crisp bars
How to Store Leftovers
Leftovers should be stored in the fridge in an airtight container for up to 5 days. When ready to eat, you can serve either hot or cold!
What to Serve with Cranberry Crisp Bars
Cranberry crisp bars are great served on their own, or they can be heated up a little and served with a little ice cream!

Can I Freeze Leftovers?
Cranberry crisp bars can be frozen for up to 6 months. To freeze, make sure the bars are completely cooled before wrapping in plastic wrap (I like to use Glad Press n Seal), and then place into an airtight freezer bag.
To defrost, take out 24 hours before serving and put the bars in the fridge to defrost.
How to The Recipe Vegan
It’s really easy to make this recipe vegan by swapping out butter for a plant based butter. My favorite butter to use is Miyokos, which can be found at Target or Whole Foods.

- 1/2 tsp sea salt
- 3/4 cup butter cut into small cubes (to make this vegan, use a vegan butter at a 1:1 ratio. I like to use Miyokos)
- 3 1/2 cup cranberries fresh or frozen
Crisp Topping
- 1/3 cup brown sugar
- 2 tbsp all purpose flour
- 1 tsp ground cinnamon
- 2 tbsp butter cubed (if making this vegan, substitute for a plant based butter like Miyokos)
