Easy Homemade Chocolate Covered Strawberries

It really doesn’t get any better than that.

Specialty Ingredients for Chocolate Covered Strawberries
The type of chocolate you choose to use to make strawberries covered in chocolate is important. You want a high quality, flavorful chocolate to make the flavor of your strawberries really pop! A cheap bag of chocolate just won’t do. Plus, good quality chocolate will melt better and make it easier for you to dip the berries.

Now let’s talk about the strawberries. Look for fruit that is bright red and has no white patches. I like to smell the strawberries too. When they are ripe, they will smell sweet and fruity! Look for long stem strawberries that are easier to dip and look even more elegant.

Once you have your specialty chocolate, a few ripe, red berries and the coconut oil, you are ready to dip!

How to Make Chocolate Covered Strawberries
I always start by getting my bowls and pans ready. You don’t want your chocolate covered strawberries to stick to the pan and peel the chocolate off of the berry. Cover your pan with a non stick Silpat or parchment paper to prevent the chocolate-covered strawberries from sticking.
Next, you want to wash and dry your berries. Letting them air dry is very important! The chocolate will not adhere to the berries if they are wet. You can pat them with a paper towel just to make sure they are completely dry. Do not skip this step!
I like to microwave my chocolate in 20 second increments, stirring after each segment. This is a very quick way to melt chocolate but you can also choose to use a double boiler. Just make sure to melt your chocolate slowly and stir it often so that it is nice and smooth.
Hold the berries by the stem as you dip. Try not to fully submerge the berries in the chocolate but leave a little bit of red strawberry showing at the top. Shake the berries a little to remove any excess chocolate before you dip them into the chopped pecans. The chopped nuts will stick better to a thin layer of chocolate rather than a drippy one!

Chocolate Covered Strawberries

Equipment
- Mixing bowls
- Rubber spatula
- Baking sheet
- Silpat or parchment paper
Ingredients
- 16 ounces strawberries, preferably organic
- 1/2 cup cacao dark chocolate baking chips
- 1 1/2 Tablespoons coconut oil, divided
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup white chocolate chips
- 1/4 cup pecans, very finely chopped
Instructions
- Line a large baking sheet with wax paper or a Silpat™ baking mat. Set aside.
- Thoroughly wash strawberries and pat dry with a paper towel. Place on the prepared baking sheet and allow to air dry for one hour or until completely dry.
- Place dark chocolate chips and one-half tablespoon coconut oil in a medium microwave-safe bowl. Microwave the chocolate chips 20 seconds at a time, stirring in between each segment, until melted and completely smooth.
- Dip half the strawberries into the dark chocolate until covered. Gently drag the bottom edge against the side of the bowl to remove excess chocolate before transferring to the baking sheet.
- Optional: If using two types of chocolate chips, repeat Steps #3 and #4 with the semi-sweet chocolate chips, one-half tablespoon coconut oil, and the remaining strawberries.
- Place the baking sheet in the refrigerator until the chocolate completely “sets,” approximately 20 minutes.
- Place the white chocolate chips and the remaining coconut oil in a medium microwave-safe bowl. Microwave, 20 seconds at a time, stirring in between segments, until the chocolate is completely melted. Carefully drizzle the melted white chocolate over half the chocolate-covered strawberries with a spoon.Tip: For better control, use a pastry bag fitted with a very small tip or an empty squeeze bottle for this.
- Place the finely chopped pecans in a small bowl and set aside.
- Dip the bottom of remaining strawberries in the melted white chocolate and then dip into the bowl of chopped pecans. Swirl until the bottom of each strawberry is completely coated in the nuts. Transfer to the baking sheet with the other strawberries and return to refrigerator until set, approximately 20 minutes.
- When the chocolate is firm, remove the baking sheet from the refrigerator and serve immediately. Enjoy!
