Easy and Delicious Vegan Instant Pot Street Tacos
This is going to be your new favorite taco recipe! Vegan Street Tacos are so easy to make and are a delicious plant based meal that’s loaded with protein. Simply combine all ingredients in the Instant Pot and dinner’s done!

Tacos are a weekly staple in our menu because they’re so easy to make and can be customized so everyone loves them. This week we decided to try a new spin on our tacos and made them plant based and they were a huge hit!
The taco mix is loaded with taco flavor and packed with protein thanks to lentils! This is a great family dish that even my picky toddler gobbled up.

? What is a Street Taco?
A street taco is a smaller version of a taco that’s typically served on a corn tortilla. The tacos are smaller and more portable, and they’re lower calorie than larger tacos. I like to use Mission Carb Balance Street Taco Tortillas to keep it low on Weight Watcher points.
No street taco tortillas on hand? No problem! This recipe can also be made with regular sized tortillas.

? Ingredients
- 2 cups green lentils
- 6 tbsp taco seasoning
- 2 15oz cans of tomato sauce
- 2 4.5oz can of green chili
- 4 cups vegetable broth
- 10 street taco tortillas
- Optional Toppings: Red Onion, Corn, Guacamole, Salsa and Tomatoes (or your favorite!)
? Instructions
- Combine the green lentils, taco seasoning, tomato sauce, green chilis and vegetable broth in the Instant Pot.
- Seal the Instant Pot lid and set to manual high pressure to 15 minutes (it will take 5-10 minutes for the Instant Pot to come to pressure).
- After 15 minutes, quick release the Instant Pot and allow the taco lentils to sit for 5-10 minutes so the sauce thickens up.
- Scoop the lentil mixture evenly into the street taco tortillas and serve with your favorite toppings!

? What is an Instant Pot Quick Release?
A quick release on the Instant Pot is when you release the pressure valve from the Instant Pot when the cook time is up. Some recipes will mention a Natural Release which means you allow the pressure to naturally release on it’s own.

?How to Store Leftover Vegan Street Tacos
I recommend storing leftovers in the refrigerator for up to 5 days. When ready to reheat, place in the microwave for 30-60 second increments until it’s heated up to the desired temperature.
To freeze the lentil taco mix, place in an airtight freezer bag and freeze for up to 6 months. Place in refrigerator for 24 hours to defrost before serving.
