I had my first chocolate chip cookie pie when I was in high school and instantly was a huge fan! It was extremely gooey and the inside tasted just like an under-baked chocolate chip cookie.
This lightened up version is a version I’ve been making for my family for years that’s been a hit! It has all the flavors and textures, but has secret good-for-you ingredients. Enjoy your chocolate chip cookie pie without the guilt!

Equipment

Ingredients
2 cans garbanzo beans, drained and rinsed
1/4 cup unsweetened apple sauce
2 tsp vanilla extract
1 cup quick oats
1 1/3 cup coconut palm sugar (or brown sugar)
1/2 tsp salt
1/2 tsp baking soda
2 tsp baking powder
3/4 cup chocolate chips
Instructions
Preheat an oven to 350 degrees.
Combine all ingredients except the chocolate chips and blend until completely mixed.Fold in the chocolate chips and. pour the batter into a non-stick 9″ pie dish.
Bake for 35 minutes or until golden browned. Allow to cool 5 minutes before serving

Chocolate chip cookie pie is great served on it’s own or with a side of ice cream or whipped cream.
Another tasty variation is mixing in walnuts in addition to the chocolate chips
How to Store Leftovers and Reheat
Leftovers should be stored in an airtight container in the refrigerator for up to 5 days. To freeze leftovers, wrap in saran wrap and then place in a freezer bag for up to 6 months.
To reheat, place on a microwave safe plate and reheat for 1-2 minutes or until heated through.
