Quinoa is one of my favorite superfoods. I make a big batch every week during my meal prep to use throughout the week with our lunches and dinners. I love making quinoa in the Instant Pot because it's a quick set it and forget it way to make it and it always comes out perfectly fluffy and cooked.

? What is Quinoa?
Quinoa is a delicious and healthy gluten-free grain that's packed with nutrients. It's similar to rice but slightly nutty. It can be found usually in the rice section of the grocery store or on Amazon.

- 1 cup quinoa
- 1 cup water
? Instructions
- In a bowl, rinse the quinoa
- Combine the quinoa and water in the Instant Pot.
- Seal the lid and set on manual high pressure for 1 minute
- Allow the Instant Pot to naturally release for 13 minutes or until all liquid has been absorbed.
?Recipe Tips and Variations
- To double this recipe, use 2 cups quinoa and 2 cups water and allow to naturally release for 15 minutes.
- Quinoa is a great base for a quick healthy lunch! I like to use it for Southwest Quinoa Bowls, fruit salad, and white bean soup. It's also great served as a side!
- Cooked quinoa should be stored in the refrigerator in an airtight container for 5-7 days. I don't recommend freezing it.
