I love hard boiled eggs but absolutely hated making them on the stove top because for some reason I never could get them to come out right! One year for Christmas I received a hard boiled egg maker and it was a complete game changer for me.
Unfortunately, it my egg cooker only lasted a few months before it broke.
This ended up being a blessing in disguise because it led me to try making them in the Instant Pot and WOW! The eggs came out perfect in under 20 minutes, and the shells practically fell right off.

To make this recipe, you'll need:
Eggs - however many you'd like to make!
Water

An Instant Pot (6 QT or 8 QT)
Trivet
Optional: Egg Trivet
How To Make Instant Pot Hard Boiled Eggs (6 Qt Instructions)
Pour 1 cup of water in the bottom of the Instant Pot (if you're using an 8 QT Instant Pot, use 1 ½ cups water instead of 1 cup)
Place the trivet or hard boiled egg rack into the Instant Pot and carefully place as many eggs as you'd like to make on top of the trivet.
Seal the Instant Pot and set to Manual High Pressure for 5 minutes (it'll take about 5 minutes to come to pressure).
Once the Instant Pot is done cooking, allow it to naturally release for 5 minutes.
While the Instant Pot is naturally releasing, fill a bowl with cold water and ice cubes.
After 5 minutes of naturally releasing the pressure, quick release the remainder of the pressure.
Take the eggs out of the Instant Pot and carefully place in the ice water.
Allow the eggs to cool in the ice water at least 5 minutes before eating.

How to Peel Hard Boiled Eggs (and Video)
The best part of making hard boiled eggs in the Instant Pot is how easy they peel. All you have to do is crack them slightly and then peel off the shell.
The shell will practically fall right off and won't take off any of the egg whites!

To make these eggs in an 8 QT Instant Pot you'll want to bump up the amount of water. Instead of using 1 cup of water, you'll use 1 ½ cups of water.
How Many Eggs Can I Cook at 1 Time?
You can cook as many eggs in the Instant Pot that will fit on the trivet!
On the trivet that comes with the Instant Pot, I've found I can fit about 7 eggs easily. If I'm cooking more than 7 eggs, I prefer to use the egg trivet because I find the eggs cook more evenly in it than they do stacked on the regular trivet.
Can I Freeze Leftovers?
I don't recommend freezing leftovers - eggs just don't taste good after being frozen.
