What Are Strawberry Cheesecake Bites?

Strawberry cheesecake bites are a lightened up version of the popular dessert. They’re fresh strawberries that are packed with a delicious cheesecake filling, and then topped with a little graham cracker! They’re a perfect no guilt dessert.

Equipment

Ingredients

  • 1 pint strawberries (about 14-16 medium to large)
  • 4 oz 1/3 less fat cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/2 sheet graham cracker, crumbled

How to Make Strawberry Cheesecake Bites

Cut off the tops of the strawberries and scoop out the inside to create strawberry shells.

In a mixing bowl, combine the cream cheese, powdered sugar and vanilla and mix with an electric mixer until well combined.

Fill the strawberries with the cream cheese mixture.

Sprinkle the crushed graham cracker on top and serve!

RECIPE TIPS AND VARIATIONS

Mix up the recipe by making different variations of cheesecake filling. Some of my favorites are using chocolate graham crackers or mixing in little oreo pieces into the cheesecake filling.

I like to use a butter knife to put the filling into the strawberries but you could also use a piping bag

Strawberry Cheesecake Bites are best served right after preparing so I recommend making them close to when you plan on serving them

How to Store Leftovers

Leftovers should be stored in an airtight container in the refrigerator for up to a day. These are best served shortly after preparing.

I don’t recommend freezing leftovers.
