What Are Strawberry Cheesecake Bites?
Strawberry cheesecake bites are a lightened up version of the popular dessert. They're fresh strawberries that are packed with a delicious cheesecake filling, and then topped with a little graham cracker! They're a perfect no guilt dessert.
Equipment
Ingredients
- 1 pint strawberries (about 14-16 medium to large)
- 4 oz â…“ less fat cream cheese, softened
- ¼ cup powdered sugar
- ½ teaspoon vanilla extract
- ½ sheet graham cracker, crumbled
How to Make Strawberry Cheesecake Bites
- Cut off the tops of the strawberries and scoop out the inside to create strawberry shells.
- In a mixing bowl, combine the cream cheese, powdered sugar and vanilla and mix with an electric mixer until well combined.
- Fill the strawberries with the cream cheese mixture.
- Sprinkle the crushed graham cracker on top and serve!
RECIPE TIPS AND VARIATIONS
- Mix up the recipe by making different variations of cheesecake filling. Some of my favorites are using chocolate graham crackers or mixing in little oreo pieces into the cheesecake filling.
- I like to use a butter knife to put the filling into the strawberries but you could also use a piping bag
- Strawberry Cheesecake Bites are best served right after preparing so I recommend making them close to when you plan on serving them
How to Store Leftovers
Leftovers should be stored in an airtight container in the refrigerator for up to a day. These are best served shortly after preparing.
I don't recommend freezing leftovers.
