Lately, Little A has been really into watching Daniel Tiger and in a recent episode, we watched recently it was all about banana bread! This got us both in the mood to make some banana bread. The only problem we had was that we had 1 ripe banana in the house.

We decided to try to take our regular banana bread and make it into mini loaves and it was a success!

The banana bread came out perfectly moist and fluffy, and it was an easy recipe for my toddler to help with and the 1 banana was the perfect amount! Plus these mini banana bread loaves came out so cute! This actually might be my new go-to way of making banana bread!

What is Banana Bread?

Banana bread is a dessert-like bread that has banana and cinnamon flavors. It’s incredibly moist and has a fluffy texture. The best part of banana bread is that not only is it easy to make, but you can also customize it with fun mix-ins like walnuts, chocolate chips, or dried fruit.

Ingredients Needed

To make this recipe you’ll need:

  • Banana, mashed
  • Vanilla extract
  • An egg
  • Olive oil
  • Flour
  • Brown Sugar
  • Granulated Sugar
  • Cinnamon
  • Baking Soda
  • Salt
  • Any additional toppings (chocolate chips, dried fruit, nuts, etc.)

Equipment Needed

To make this recipe you’ll need the following equipment. These are Amazon affiliate links so you know exactly what equipment to use:

  • 3 mini loaves
  • Cooking spray
  • Medium Bowl
  • Mini Spatula – optional, but a good tool to have around to get all the extra batter off the bowl

How to Make Banana Bread

Preheat an oven to 325 degrees and spray 3 mini loaf pans with nonstick cooking spray

In a medium bowl, combine the mashed banana, vanilla extract, egg, and olive oil until well combined.

Mix in the flour, brown sugar, granulated sugar, ground cinnamon, salt, and baking soda. Stir until well combined, and then fold in any optional mix-ins.

Pour the batter evenly into 3 mini loaf pans and sprinkle a little ground cinnamon on top of each loaf. Bake for 20-22 minutes, or until the bread turns golden brown.

Allow the banana bread to cool for 5 minutes before serving.

Recipe Tips and Tricks

This recipe can be used to make one big loaf instead of mini loaves! To make a larger loaf, increase baking time by about 5 minutes, or until it becomes golden brown.

The riper the banana is the better (and more banana flavor) the banana bread will be. To tell if a banana is ripe, you’ll notice the peel turn brown on the outside.

Mix-ins are a great way to add variety and flavor to your banana bread. Mix in any of the following:

Nuts – Almonds, walnuts, pecans

Chocolate Chips – Dark chocolate, milk chocolate

Dried Fruit – Dried bananas, raisins, apples

Tips for Baking with Toddlers

This is a great recipe to make with toddlers and kids! Toddlers can help make this recipe by scooping ingredients, pouring them into the bowl, mixing – and of course (the best part), taste testing!

To make it easier, I like to use a kitchen tower like this one to help Little A be counter height. I also have her have a separate set of mixing bowls and measuring cups so she feels involved in the process.

How to Store Leftovers

Once completely cooled, individually wrap the banana bread with plastic wrap and store them for 5 days in an airtight container.

Banana bread can also be frozen! Once it’s completely cooled, wrap in plastic wrap and then place into an airtight freezer bag. for up to 6 months in the freezer.

To defrost, remove from the freezer and place in the fridge to defrost 24 hours before serving.
