Rice Krispies Treats are a delicious gooey dessert that will remind you of your childhood. These Shamrock treats are a fun spin on the classic dessert and perfect for St. Patrick’s Day! They’re super easy to make and best of all are ready in under 15 minutes!
Ingredients
To make this recipe, you’ll need:
- 1/4 cup butter
- 4 cups mini marshmallows
- 1/2 tsp vanilla extract
- 3-4 drops green food coloring
- 6 cups Rice Krispies cereal

- Wooden Spoon
- Baking Sheet
- Parchment Paper or Aluminum Foil
- Rolling Pin
- Shamrock Cookie Cutter
How to Make Shamrock Rice Krispies Treats
- Lay parchment paper or non stick aluminum foil in a cookie sheet and set aside.
- In a large pot, melt the butter over medium heat.
- Once the butter is melted, lower the heat to low and add in all the mini marshmallows. Stir until the marshmallows are completely melted.
- Stir in the vanilla extract and food coloring and mix well.
- Once the marshmallow mix is the color you want it to be, remove the pot from heat and mix in the Rice Krispies cereal. Stir to completely combine the cereal and marshmallow mix.
- Remove the cereal mix from the pot and spread evenly on the cookie sheet.
- Place another sheet of parchment paper on top of the cereal mix and use a rolling pin to smooth out the mixture. Allow to sit for a minute or two.
- Remove the parchment paper and use a shamrock cookie cutter to create Shamrock Rice Krispie Treats. Enjoy!

Can I Make These in the Microwave?
Rice Krispies Treats can also be made in the microwave. To make in the microwave, microwave the butter until melted and set aside (about 45 seconds). In a separate microwave safe bowl, microwave the marshmallows for 2-3 minutes, stirring every 30 seconds, until melted. Once melted, add in the butter and follow the regular recipe.
It’s super important to stir the marshmallows often or else they can become overcooked and result in hard Rice Krispies treats.
Can you Freeze Leftovers?
Yes! Extra Rice Krispies treats can be frozen for up to 6 months. I like to wrap them individually in plastic wrap and then place in a freezer bag.
When you’re ready to serve, defrost by putting in the fridge 24 hours before you plan to eat them.
