Skinny Instant Pot Churro Bites
A fun spin on the State Fair classic dish! These churro bites are a lightened up treat that are so delicious and easy to make. One bite of these will instantly make you think you’re back at the State Fair!
Churros are one of my favorite State Fair treats and something I look forward to ordering every year. Sadly the Minnesota State Fair is cancelled this year so I knew I had to find some way to still get my churro fix!
I started playing around with the egg bite mold I got for my Instant Pot and discovered churro bites! After a few tweaks I came up with a recipe that’s light in calories and loaded with churro taste. You won’t be disappointed!

For the Skinny Churro Bites:
- 1/3 cup coconut palm sugar
- 1/3 cup unsweetened applesauce
- 1 tsp cinnamon
- 1/2 cup skim milk (I like to use Fairlife)
- 1 cup flour
- 1 tsp baking powder
- 1/4 tsp salt
? INSTRUCTIONS
- In a medium bowl, mix together the coconut palm sugar, applesauce, cinnamon and skim milk.
- Once well combined, mix in the flour, baking powder and salt. Mix well.
- Spray the egg bite mold with cooking spray and spoon in the batter evenly into the 7 cups. Once filled, cover the egg bite mold with non-stick aluminum foil.
- Insert the trivet into the Instant Pot (make sure handles are up!) and fill with 1 cup water. Place the covered egg bite mold on top of the trivet.
- Seal the Instant Pot and cook on manual for 16 minutes. Allow to natural release for 13 minutes before removing from Instant Pot.
- In a small bowl, mix together the cinnamon and sugar and set aside.
- Once churro bites are done, remove from egg mold and roll in the cinnamon sugar mix.
? HOW TO STORE LEFTOVERS (and freeze)
Leftovers can be stored in an airtight container for up to 5 days on the counter.
To freeze, wrap tightly in saran wrap and then store in an airtight freezer bag. Store for up to 5 months in the freezer. When you’re ready to serve, simply defrost in the refrigerator 24 hours before eating. Heat up in the microwave for 60 – 90 seconds.
? RECIPE TIPS AND VARIATIONS
- The texture of these bites are a little chewy in the middle. When they come out of the Instant Pot they’ll be almost like a cake pop in the middle – if you prefer the texture to be a little more solid just wait until they cool completely to eat, about 20-30 minutes.
- Coconut palm sugar can be swapped out for brown sugar at a 1:1 ratio (this will impact the nutritional information!)
- To make the churro balls more doughy on the inside, cook for only 12 minutes and let sit for 10 minutes.
