Bacon and Cheese Egg Bites are a quick and easy healthy breakfast recipe that taste just like the ones you order at Starbucks, but a fraction of the calories! Once you make these you'll be hooked!

Last summer during a Starbucks run I decided to try their new "Egg Bites" and instantly became hooked! They were protein packed delicious little egg bites that were so light and fluffy. Unfortunately, they weren't very friendly to my wallet or waistline so I started to limit how often I'd order them.
I've been playing around with my Instant Pot lately and decided to try to make a lightened up version of these yummy egg bites. After a few tries I came up with this insanely easy 4 ingredient recipe that tastes just like the Starbucks version! The great thing is they're only 100 calories each so they're a guilt-free breakfast or snack.

To make this recipe, you'll need:
- 4 eggs
- ½ cup fat free cottage cheese
- ½ cup reduced fat shredded cheddar cheese
- 4 slices turkey bacon, cooked and cut into pieces
How to Make Bacon and Cheese Egg Bites
- In the Instant Pot, place the trivet and 1 cup of water. Make sure to have the handles of the trivet facing up so it's easy to remove the silicone mold after cooking.
- In a mixing bowl, add the eggs, cottage cheese and cheddar cheese. Blend with an blender or immersion blender until smooth, about 30 seconds.
- Mix in the bacon
- Pour the batter evenly into the 7 silicone molds. Cover with aluminum foil
- Place the covered silicone mold on the trivet inside the Instant Pot
- Seal and press the "Steam" button and set for 10 minutes.
- Once the 10 minutes are up, allow to naturally release for 10 minutes before opening the Instant Pot.

How to Store Leftovers
Leftover Egg Bites can be stores in the silicone mold (with the lid) or an airtight container for up to 5 days in the refrigerator.

Can I Freeze Leftovers?
Yes! These Egg Bites can be frozen. To freeze them, store in an airtight container and freeze for up to 5 months. When you're ready to serve, reheat them in the microwave to 90 seconds to 2 minutes.
Do I Need to Cover with Aluminum Foil?
I prefer to cover with aluminum foil while cooking because I found it helps them cook more evenly. Some readers have reported that they've been able to cook without any covering and they come out great too.
One thing I don't recommend doing is using the egg bite mold cover while cooking. Some of the molds come with a plastic cover which will melt while you cook.

I calculated these as 3 points each on the Blue Plan, but it will vary depending on which plan you follow and the ingredients you use. For the most accurate WW points, I recommend entering the recipe into the WW recipe builder in the app.
