When I go out to eat I always want to order black bean burgers but get a little nervous that the patty is going to end up being super mushy and messy. I started testing out ways to make a non-mushy black bean burger at home and this recipe was an instant hit with the whole family!

Ingredients
To make this recipe you’ll need:
- 1/2 cup walnuts
- 1/2 cup old fashioned oats
- 1 tsp olive oil
- 2 garlic cloves, minced
- 1 medium onion, diced
- 1 cup mushrooms, washed and diced
- 1 can black beans, drained and rinsed
- 1 cup cooked brown rice
- 1 tbsp tomato paste
- 2 tbsp spicy brown mustard
- 2 tbsp soy sauce
- 1 tbsp paprika
- 1 tsp salt
- 8 burger buns
- Optional toppings: mustard, ketchup, cheese, onions, tomatoes, lettuce, guacamole etc.
How to Make Black Bean Burgers
- In a medium skillet, toast the walnuts for 4-5 minutes or until golden brown and fragrant. Put into a blender or food processor with the oats and loosely blend together. Set aside.
- In the same medium skillet, heat the olive oil over medium heat. Add in the garlic, onion and mushrooms and saute for 5-7 minutes or until everything has soften. Place in a large bowl.
- In the large bowl with the garlic mix, add in the black beans, and mash well. Mix in the walnut oat mix, tomato paste, rice, brown mustard, soy sauce, paprika, and salt until well combined.
- Form 8 even patties out of the mix. Heat the medium skillet to medium heat and cook the patties until browned, about 5 minutes on each side.
- Place the cooked patties on hamburger buns and serve with your favorite toppings!

I like to prep a batch of Black Bean burgers and freeze them so I always have a batch on hand. To freeze burgers, wrap in saran wrap (I like to use Glad Press n Seal) and then place into a airtight freezer bag. Freeze for up to 6 months. When ready to eat, burgers can be cooked from frozen – it will just take a little longer on each side.
Our family love a little spicy kick in our meals and will sometimes add in a pinch or two of cayenne pepper.
These burgers can also make great sliders! To make into sliders, make smaller patties and cook for about 2-3 minutes each side.
