When we first started trying to add in more plant based meals in our diet we noticed that we quickly started to miss cheese. My husband loves parmesan cheese and quickly started to look for a way to replicate it – and after a few tweaks, he came up with this perfect recipe!
We make this parmesan cheese weekly and sprinkle it on top of almost everything we make – pastas, soups, and more. It’s the perfect alternative to grated parmesan cheese!

To make this recipe, you’ll need:
- Raw Cashews
- Nutritional Yeast
- Sea Salt
- Garlic Powder
What is Nutritional Yeast?
According to Bob’s Red Mill:
Nutritional yeast is made from a specially selected strain of Saccharomyces cerevisiae. One of the benefits of nutritional yeast is that it comes in large flakes that are described as having a cheesy and nutty flavor, making it a great vegetarian or vegan substitute. It also has good nutritional benefits of B12 vitamins and high protein content, making it an ideal vegetarian support formula.

Recommended Equiptment
I highly recommend using a food processor to make parmesan cheese because it’ll help make the cheese a consistent texture that’s very similar to parmesan cheese. I love to use this food processor, but any brand will work!
How to Make Vegan Parmesan Cheese
- In a food processor, combine the raw cashews, nutritional yeast, garlic and sea salt.
- Pulse until desired texture, about a minute or two.
- Enjoy!
How to Use Vegan Parmesan Cheese
Vegan Parmesan Cheese can be substituted in for regular parmesan cheese at a 1:1 ratio. Some of my favorite ways to use it:
- Mix with a little olive oil or plant based butter and add to pasta.
- Sprinkle over baked pasta

How to Store Leftovers
Leftovers should be stored in an airtight container (I like to use mason jars) for up to 5 days.
I don’t recommend freezing leftovers (if there are any!).
