What do you get when you combine a yogurt parfait with a muffin? Yogurt Parfait Granola Cups! This is a delicious and fun healthy breakfast that is so easy to make. I started making these granola cups when I wanted to make a fun dish for our Sunday brunch and they quickly became a staple in our weekly meal plan.
🥄What is a yogurt parfait?
Yogurt parfait is an easy breakfast that starts with yogurt and then is topped with berries, nuts, honey, and granola. It's usually layered in a cup with a layer of yogurt, some berries, a little more yogurt, and then topped with more berries, granola, nuts, etc. The great thing about parfaits is that there isn't a right or wrong way to make them and can be completely customized based on your tastes.
🥘 Ingredients
- ¼ cup agave (or honey)
- 1 mashed banana (about ¼ cup)
- ½ tsp vanilla extract
- ½ tsp salt
- ½ tsp cinnamon
- 1 ⅓ cup old fashioned oats
- Yogurt (I like to use AYO almond yogurt)
- Optional toppings: fresh berries (I like to use blueberries, strawberries, and blackberries) as well as sliced almonds
🔪 Instructions
- Spray a muffin tin with non-stick cooking spray.
- In a medium bow, combine the agave (or honey if using), mashed banana, vanilla extract, salt and cinnamon until well combined. Stir in the old fashioned oats.
- Spoon the oat mix evenly into 6 muffin cups. Using a spoon or a finger, press down in the middle of the cups to make them into little cups/bowls.
- Cover the muffin tin with aluminum foil and place into the refrigerator for at least an hour.
- While the granola cups are in the fridge, preheat an oven to 325 degrees. Place the muffin tin (without the aluminum foil cover) in the oven for 10-12 minutes, or until golden browned.
- Once the granola cups are done, allow them to cool completely before serving - this will help them keep their form!
- Once cooled, fill the cups with your favorite yogurt and then top with sliced berries and/or nuts!
🥡 How to store leftovers
The granola cups alone (not topped with yogurt) should be stored in the refrigerator for up to 5 days in an airtight container. If the granola cups are filled with yogurt, they'll last for about a day in the refrigerator.
The granola cups alone can also be frozen for up to 6 months in an airtight freezer bag.
💭 Are Yogurt Parfaits Healthy?
Granola parfaits can be healthy as long as you keep the toppings low in sugar. I like to stick to fresh fruits for mine!
🥣 How to Make a Vegan Yogurt Parfait
This recipe is easy to make vegan by swapping out dairy yogurt with a plant based yogurt like AYO almond yogurt. I like to use AYO because not only is it delicious and creamy, but it also has less sugar than other plant based (and even dairy) yogurts. I try to be mindful of my family's sugar intake and this is a yogurt I feel good about serving to my toddler. I also love that they're a family owned company and make the almond yogurt using almonds from their family's farm!
📖 Recipe Tips and Tricks
- This recipe can be made into mini parfaits by making these in a mini muffin tin. If making mini parfaits, simply reduce baking time to about 8-10 minutes or until golden browned.
- Parfaits are completely customizable so you can add in any of your favorite fruits, nuts, and other toppings. Some of my favorites are sliced almonds, kiwis, strawberries and blueberries.
- This is a fun recipe for brunch! Make a "Make Your Own Parfait" bar but putting out granola cups with different types of yogurts and toppings so everyone can make their own creations.
